I am not much of a pancake fan, unless they are homemade and filled with warm blueberries. These pancakes are so delicious and completely fool proof!
Fresh Blueberry Pancakes Recipe:
2 large eggs
1 1/4 cup milk
2 teaspoons vanilla extract
3 Tablespoons vegetable oil
1 1/2 cups all-purpose flour
3/4 teaspoon salt
2 teaspoons baking powder
2 Tablespoons sugar
3/4 cup fresh blueberries
Heat a griddle to 350 degrees F or a large frying pan over medium heat. Spray the griddle with nonstick coking spray. In a medium sized bowl, beat together eggs, milk and vanilla until foamy. Stir in vegetable oil. Add the flour, salt, baking powder and sugar until just combined. Set the batter aside for 5 minutes. Pour batter onto griddle or pan using a 1/4 cup measuring cup. Sprinkle a few blueberries on top of each pancake. Cook for about 2 minutes on one side and flip. Cook for 2 more minutes or until golden brown. Serve warm with syrup or your favorite toppings.
